Acculturation is often thought of as a one-way street and there is a lot of truth in that. But here we are in a place where the labor force is Latino, but the customer base, generally speaking, is not. Ten years ago you would have been unlikely to see a broad mix of peppers, let alone yuca. Food is perhaps the simplest agent of change. suburbia
